About the Domaine:

The Domaine of the Hospices de Beaune is a historical "winemaking hospital" with five centuries of vineyard heritage. It began in 1457 when Jean Guillotte le Verrier donated vines to the Hôtel-Dieu (hospital) in Beaune. This tradition of vine donations became a way for families and patients to show gratitude toward the institution. The wines of the Hospices de Beaune, often referred to as "Cuvée," typically carry the name of the family that donated the plots of vines.

Today, the estate spans 60 hectares, with 85% of the land dedicated to 1er Cru and Grand Cru vineyards. The wines from the Domaine are highly regarded and are sold annually during a prestigious auction held on the third weekend of November.

Elevage (Aging Process):

In 2017, Ludivine Giveau took the reins as head of the Domaine of the Hospices de Beaune. The wines sold at the auction are quite young, as the harvest typically takes place only a few months before. After the auction, the wines need careful aging to fully reveal their potential. This is where a "negotiator" comes into play. In this case, the role is taken up by my father, who has been professionally aging wine for over 35 years.

Over a period of 16 to 18 months, my family ensures the wines are aged with respect to their terroirs, enhancing their nuances and complexities. The goal is to bring out the true character of each wine, allowing them to evolve and reach their full potential.

Tasting notes:

This appellation is a consistent beauty every year. Volnay Santenots often have surprising structure and richness. Deep red color with rich aromas and a splendid complexity. The palate is full bodied and creamy texture with dense red fruits. The quality of the tannins is exceptionally fine with a spectacular mouth coating length.
