A Life project, guided by my passion for spirits
After having had the honour of being made Chevalier du Tastevin at Clos Vougeot in 2019, I embarked in 2021, after the sale of my establishments, on a reconversion that had been maturing for years: to become a distiller and distiller of cru, in particular by training in the distillation of spirits with carefully selected specialists, in Alsace, Switzerland and then at the International Spirits Centre in Cognac.
Gardener, fisherman, picker and cook, this new project allows me to combine all my skills and develop a complete concept by creating recipes based on carefully selected aromatics that testify to all my Love of Nature. Accompanied by my other half Alexandra, with whom I share this new project of life together, I am ready at 48 years old to share with you my know-how and my passion for spirits by delivering Le Secret de l'Herbier... To your taste buds!
A restaurateur at heart, a distiller at heart.
My name is Cyril Guyon, I have 32 years of experience in the food industry and I am a real taste enthusiast. Grandson of a grocer-bistro owner, I started the profession with 4 years of hotel school on the Isle of Beauty (Corsica) and the Isle of Sensations (Reunion), to start my career on the English coast (Bournemouth). Following this, I went back to my roots to return to my birthplace (Dijon), where I stayed for 12 years in one of the most notable brasseries in the region (La Concorde) hired as a lemonade boy to become director 9 years later. Subsequently, I opened 3 establishments in Dijon and participated in obtaining a Michelin star in Corsica as a consultant. A globetrotter at heart, my professional and personal experiences have led me to travel the world, making new culinary, gustatory and olfactory experiences with each trip.
Made from carefully selected raw materials and distilled in very limited vintages. Gradual infusion, maceration of juniper berries, pepper, Timut berries or cardamom, our range expresses all the richness of our terroir and our know-how, revealing note after note all its secrets and aromatic richness. Live the unique sensory experience of the SECRET de l'herbarium, a humble representative of this French Art of Living that is dear to us.
Manufacturing
In order to create a range of premium spirits, we strive to achieve quality manufacturing by taking great care and high standards at each stage:
To begin with, we carefully select different botanicals (berries, spices, herbs, flowers) from local picking, from the distillery or from selected organic producers.
Some of these botanicals macerate for a defined time in wheat alcohol of more than 96%, of organic origin, guaranteeing a very high purity and quality of the base alcohol.
These macerations are then distilled in our all-copper column Holstein still. The alcohol vapours then pass through aromatic baskets filled with fresh and fragile botanicals.
Then come the stages of resting and wetting the distillate, obtained using fresh water of great purity, followed by a short maceration of botanicals (ESPRIT DE SAISON range of Gins le SECRET de l'Herbier) before bottling in a bottle reminiscent of that of the apothecaries of yesteryear.
Each bottle is then labelled and packaged by us, before making its way to your taste buds
Our values
Grateful to Nature, which offers us all of our raw materials, we work at all times in an eco-responsible and environmentally friendly approach. Thus, we take particular care to take only what we need during our picking, to favor local supplies as much as possible when possible, to scrupulously respect the seasonality of our ingredients and to reduce our carbon footprint as much as possible during the manufacturing processes. Our goal? To create a complete range of spirits that resembles us and that is in line with our values.
A return to the roots, as an obvious choice
In search of the ideal location to create our distillery, my choice logically turned to the rehabilitation of a family farm, in the heart of the Burgundy village of Vaux-Saules, land of the sources of the Seine.
These old stones, its magnificent fireplace and its imposing framework make it a perfect setting to bring our project to life.
A place, inspiring and rooted, that comes back to life
Now completely renovated by us, this old building from 1840 is now finding a second life thanks to our activity, which we wanted to anchor in the heart of a terroir that is dear to us.
In addition to a creative laboratory, since January 2022, it has been home to the central element of our production: our Holstein still.
