About the Domaine:

L'Alambic Bourguignon (SAB) was founded by Mathieu Sabbagh, who brought a mobile distillery to life with the aim of continuing Burgundy's long-standing tradition of artisanal distillation. Mathieu travels from one producer to another at the end of each harvest, distilling freshly harvested grapes to create delicate and elegant craft spirits. This unique approach reflects his dedication to preserving the heritage of Burgundy, offering traditional French spirits with a modern touch.

Elevage (Aging Process):

For this particular spirit, Mathieu macerates a selection of juniper berries along with 14 other botanicals. He then adds Burgundy Chardonnay and Pinot Noir "eaux de vie" to the mix, blending the unique flavors of the region. Afterward, the mixture is left to settle for three months before it is distilled. This meticulous process results in a balanced and refined spirit, embodying both the complexity of Burgundy's terroir and the art of traditional French distillation.

Tasting notes: Rich and balanced nose of spices, juniper and ginger with a touch of red fruits on the finish. Round and long on the palate. You can either let it express itself with just a tonic or pair it with juice in refreshing cocktails.

Best before: It's a Gin, so you can keep it as long as it lasts. 

Volume/ Bottle size: 50cl. Alcohol % : 46%.

Take a beautiful cocktail glass and pour 1/3 of SAB's Gin into the glass. Put 2 or 3 big ice cubes and a poor 2/3 of an excellent tonic like East Imperial or Fever Tree tonic. You can add thin slices of dried blood orange. 

Food pairing: As an aperitif, for a brunch or anytime you feel it would be a good moment to feel good.
