About the Domaine:

L'Alambic Bourguignon (SAB) was established by Mathieu Sabbagh, who brought a mobile distillery to Burgundy. This innovative approach allows Mathieu to carry on a long-standing regional tradition by moving his distillery from one producer to another at the end of the harvest. His goal is to distill fresh grapes and craft delicate, elegant spirits that embody the unique character of Burgundy, maintaining the art of traditional French distillation while adding a modern flair.

Elevage (Aging Process):

For this particular spirit, Mathieu macerates juniper berries along with 14 other botanicals, infusing the mix with complex and aromatic flavors. He then adds Burgundy Chardonnay and Pinot Noir "eaux de vie" and allows the blend to settle for three months in Moscatel barrels. This aging process imparts a beautiful, unusual pink hue to the spirit, offering a delicate and vibrant character that's truly distinctive, showcasing both the traditional craftsmanship and innovation of L'Alambic Bourguignon.

Tasting notes: Rich and balanced nose of spices, juniper and ginger with a touch of grapes on the finish. Round, fruity and elegant on the palate due to this rest time in the Moscatel barrels. Very unusual gin!

Take a beautiful cocktail glass and pour 1/3 of SAB's Gin into the glass. Put 2 or 3 big ice cubes and a poor 2/3 of an excellent tonic like East Imperial or Fever Tree tonic. You can add thin slices of dried blood orange. 

Food pairing: As an aperitif, for a brunch or anytime you feel it would be a good moment to feel good.
