About the Domaine:

L'Alambic Bourguignon (SAB) was founded a few years ago by Mathieu Sabbagh, who invested in a mobile distillery. Mathieu's goal is to continue the rich distillation tradition of Burgundy. By moving his distillery from one producer to another at the end of each harvest, he distills freshly harvested grapes, producing delicate and elegant craft spirits that honor the region's traditions. Mathieu's approach highlights the artisan nature of his work, creating exceptional spirits in the heart of Burgundy.

Elevage (Aging Process):

The "Eaux de Vies" from L'Alambic Bourguignon are crafted from Burgundy's iconic grape varieties: Chardonnay and Pinot Noir. After distillation, they rest for 5 years in traditional Burgundy oak barrels, which impart depth and complexity. The spirits then undergo a finishing process in Cognac barrels for a few months, adding unique character and smoothness. This careful aging process, coupled with water distillation, ensures that each spirit embodies the elegance and quality of Burgundy's winemaking legacy.

Tasting notes: Strong and round on the nose with rhum and raisins aromas.Persistent finish on the palate with some oaky and rich exotic spices.
